Creamy courgette & chilli pasta with our Mediterranean Tempeh Pieces. A Quick and simple dinner ready in the time it takes you to cook the pasta

  1. Slice the courgette into 8 equally divided pieces. Bring the pasta water to a boil in a saucepan. Drop the courgette, garlic and linguine into the water and reduce to a simmer. Cook to the time specified on the pasta packaging.
  2. Remove the garlic and courgette two minutes before the pasta has reached al dente. Add to a blender with the basil and a splash of pasta water. Blitz the mixture into a sauce.
  3. Add a tbsp of extra virgin olive oil to a medium - high heat sauce pan. Add the Mediterranean tempeh pieces and sliced chilli and sautée for 3 minutes before adding your courgette sauce.
  4. Add the linguine to the tempeh & courgette sauce and mix well.
  5. Serve immedietely and enjoy
