Peri Peri Wrap with Crunchy Slaw

YOU’LL NEED

  • 1 pack Better Nature Peri Peri Tempeh, sliced or torn into long strips

  • 1 large wrap or flatbread

  • A few crisp lettuce leaves


    FOR THE CRUNCHY SLAW:

  • ½ small red cabbage, finely sliced

  • 1 carrot, grated

  • 2 tbsp mayo of choice

  • Juice of ½ lemon or lime

  • Salt + black pepper


    OPTIONAL:

  • Extra peri-peri sauce, for drizzling

HOW TO MAKE IT

  1. Cook the tempeh
    Heat a non-stick pan over medium heat. Add the peri-peri tempeh and cook for 4-5 minutes, turning until golden, sticky and slightly charred at the edges.

  2. Make the slaw
    Toss the cabbage and carrot with mayo, lemon juice, salt and pepper. This will add a delicious crunch 

  3. Build your wrap
    Warm the wraps. Layer with lettuce, pile on the hot peri-peri tempeh, then top with a generous handful of crunchy slaw.

  4. Finish strong
    Drizzle with extra peri-peri sauce if you like a proper kick. Wrap it up. Get stuck in.
