Peri Peri Wrap with Crunchy Slaw

YOU’LL NEED
1 pack Better Nature Peri Peri Tempeh, sliced or torn into long strips
1 large wrap or flatbread
A few crisp lettuce leaves
FOR THE CRUNCHY SLAW:½ small red cabbage, finely sliced
1 carrot, grated
2 tbsp mayo of choice
Juice of ½ lemon or lime
Salt + black pepper
OPTIONAL:Extra peri-peri sauce, for drizzling
HOW TO MAKE IT
Cook the tempeh
Heat a non-stick pan over medium heat. Add the peri-peri tempeh and cook for 4-5 minutes, turning until golden, sticky and slightly charred at the edges.Make the slaw
Toss the cabbage and carrot with mayo, lemon juice, salt and pepper. This will add a delicious crunchBuild your wrap
Warm the wraps. Layer with lettuce, pile on the hot peri-peri tempeh, then top with a generous handful of crunchy slaw.Finish strong
Drizzle with extra peri-peri sauce if you like a proper kick. Wrap it up. Get stuck in.
