Cornflake Buffalo Tempeh Wings

Crispy, cornflake-coated Better Nature Tempeh strips marinated in buffalo hot sauce and cooked until deeply golden. Same satisfying crunch and bite as fried chicken. Ready in 15 minutes, air fryer, oven or pan.

YOU’LL NEED

  • 1 pack Better Nature Original Tempeh, sliced into thick strips

  • 5 tbsp buffalo hot sauce (we use Frank's), plus extra for brushing

  • 60g cornflakes, crushed (leave some texture, don't crush too fine)

  • 3 tbsp plain flour

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • 4 tbsp milk of choice

  • 1 tbsp cornflour

  • 3 tbsp ranch or blue cheese dressing, to serve

  • 2 celery sticks, to serve

  • 2 spring onions, sliced, to serve

HOW TO MAKE IT

  1. Marinate the tempeh. Place the tempeh strips in a shallow dish and pour over 3 tbsp of the buffalo hot sauce. Toss to coat you can leave to marinate for a few mins, but not necessary

  2. Set up your coating station. In one bowl, mix the plain flour with the garlic powder and smoked paprika. In a second bowl, whisk the oat or soya milk with the cornflour until smooth. In a third bowl, add the crushed cornflakes.

  3. Coat the strips. Working one strip at a time, coat in the seasoned flour, dip into the milk mixture, then press firmly into the crushed cornflakes so the coating holds.

  4. Cook until golden. Air fryer: cook at 200°C for 10 to 12 minutes, flipping halfway, until deeply golden and crispy. Oven: bake at 200°C for 15 to 18 minutes, flipping halfway. Pan fry: heat 1cm of neutral oil to 180°C and fry for 3 to 4 minutes each side until golden, then drain on paper towel.

  5. Brush and serve. While still hot, brush with the remaining buffalo hot sauce. Serve immediately with ranch or blue cheese dressing, celery sticks and sliced spring onion.

Can tempeh be cooked like chicken?

Yes. Tempeh holds its shape and texture well under marinades, coatings and high heat, which is why it works so well in recipes designed around chicken, including wings, strips and skewers.

Does tempeh need to be steamed before cooking?

No, steaming isn't essential with our tempeh.

Is tempeh healthier than fried chicken?

Tempeh is made from fermented, whole soya bean protein, so it's naturally gut-friendly and not ultra-processed. A 200g pack of Better Nature tempeh contains 44g of protein, similar to a chicken breast plus lots of fibre.
