Crispy Rice and Tempeh Salad with Sesame Ginger Dressing

Got some leftover rice sitting in the fridge and a pack of our Original Tempeh calling your name? This is exactly what that combination was made for.

Our tempeh fries up in minutes and the whole thing gets pulled together with a sesame ginger dressing that's sharp, salty and a little bit sweet. It's a delicious plate of food and with Better Nature Tempeh brining 44g of protein per pack it holds its own against any chicken dish on the table.

YOU’LL NEED

  • 1 pack Better Nature Original Tempeh, torn into pieces

  • 200g cooked rice (day old or cooled works best)

  • Cucumber, sliced

  • Spring onion, sliced

  • Edamame beans

  • Sesame seeds

  • Coriander

For the dressing:

  • 2 tbsp sesame oil

  • 2 tbsp soy sauce or tamari

  • 1 tbsp rice vinegar

  • 1 tsp fresh ginger, grated

  • Juice of 1 lime

  • 1 tsp honey or maple syrup

HOW TO MAKE IT

  1. Spread the cold pre-cooked rice on a large baking sheet lined with baking paper. Press it down firmly and cook on medium-high heat Tip: drizzle with some soy sauce and oil

  2. Bake for 20 or so minutes or until the rice is nice and crispy. Keep an eye on it to make sure it doesn't burn. Leave to cool completely.

  3. While the rice cooks, fry the torn Better Nature Tempeh in a pan with a little oil for 4 to 5 minutes, turning until golden all over.

  4. Whisk together the sesame oil, soy sauce, rice vinegar, ginger, lime juice and honey or maple syrup to make the dressing.

  5. Build the bowl with the crispy rice, tempeh, cucumber, edamame and spring onion.

  6. Drizzle over the dressing generously and finish with sesame seeds and coriander.

Storage: Keeps in the fridge for up to 2 days, though the rice is best eaten fresh while still crispy. Dress just before serving.

Can I use fresh rice instead of leftover rice?

Cold, cooked rice works best because the grains separate rather than clump, which is what gives you that crispy texture. If you only have fresh rice, spread it out on a tray for 10 minutes to cool and dry slightly before frying.
