Tempeh & Peanut Butter Stir-Fry

Creamy, nutty and full of crunch, this Tempeh & Peanut Butter Stir-Fry is a quick, flavour-packed dinner that’s as satisfying as it is simple.

Ingredients

  • 200g (1 pack) Better Nature Organic Tempeh, torn into bite-sized chunks

  • Baby corn

  • 1 Red pepper

  • Mange tout or Brocoli

  • Rice for 2

  • 1 tbsp oil

    Sauce:

  • 4 tbsp peanut butter

  • 2 tbsp soy sauce (or tamari)

  • 6 tbsp water

  • 1 tsp lime juice

  • 2 tsp maple syrup (or honey)

  • 1 tsp chilli flakes (optional)

    Garnish:

  • Chopped peanuts

  • Chilli flakes

  • Wedge of lime

instructions

  1. Slice the red pepper into strips and halve the baby corn for a bite-sized delight

  2. Tear your Better Nature block into bite-sized chunks

  3. In a bowl, mix together the sauce ingredients. Tip: use boiling water so it's easier to mix

  4. Heat a tablespoon of oil in a pan, then add in the tempeh chunks. Fry them for a few minutes until they’re golden, then toss in your veggies

  5. Add your peanut sauce. Pour it over your veggies and tempeh, giving everything a good mix to coat it in that rich, creamy sauce

  6. Spoon your stir-fry over a bed of fluffy rice for a perfect base. Top with chopped peanuts, a pinch of chilli flakes and a slice of lime
