Spiced Jewelled Couscous with Tempeh

This Spiced Jewelled Couscous with Tempeh is easy to make and full of flavour - no hassle, just great taste.

ingredients

  • 1 pack of Curry Tempeh Pieces
  • 2 tbsp curry powder 
  • 1 tbsp cinnamon 
  • 2 spring onions
  • 1 cup couscous
  • A handful of almonds 
  • 80g dried cranberries
  • 80g sultanas
  • 80g dried apricots 

instructions

  1. In a bowl, add your dried cous cous along with 2 cups of boiling water and let it steam for a few minutes. 
  2. Then, uncover and cool slightly. 
  3. In the meantime, in a frying pan, cook your tempeh pieces until crispy. 
  4. Finally, combine your tempeh, couscous, spices, seasoning and dried fruit and nuts. Serve with slices of spring onions. Enjoy!
