Tempeh Rashers & Apple Salad

This is our ideal summer dish - light, nutritious and super tasty. Our tempeh rashers balance out this sweet, refreshing salad by adding the perfect, salty and meaty bite - life is all about balance, as they say.

10ml extra virgin olive oil
1 pack Smoky Tempeh Rashers
1 medium-sized apple
1 medium-sized lemon
150g mixed lettuce
20g croutons

20g walnuts, crumbled into smaller pieces
10ml balsamic glaze


Heat the olive oil in a pan over medium heat for 2 minutes. Add our Tempeh Rashers to the pan. Cook the Tempeh Rashers on either side for 2 minutes until browned, then set aside.

Finely slice the apple. Slice the lemon into wedges. Wash and tear the lettuce into small pieces. Finely slice the Tempeh Rashers to your desired size.

Toss all of the ingredients together, bar the lemon and balsamic glaze. Drizzle the lemon over the salad, then place it on top for decoration. Drizzle the balsamic glaze over the dish and serve.
