Tempeh Rashers & Apple Salad
This is our ideal summer dish - light, nutritious and super tasty. Our tempeh rashers balance out this sweet, refreshing salad by adding the perfect, salty and meaty bite - life is all about balance, as they say.

ingredients
- 10ml extra virgin olive oil
- 1 pack Smoky Tempeh Rashers
- 1 medium-sized apple
- 1 medium-sized lemon
- 150g mixed lettuce
- 20g croutons
- 20g walnuts, crumbled into smaller pieces
- 10ml balsamic glaze
instructions
- Heat the olive oil in a pan over medium heat for 2 minutes.
- Add our Tempeh Rashers to the pan.
- Cook the Tempeh Rashers on either side for 2 minutes until browned, then set aside.
- Finely slice the apple.
- Slice the lemon into wedges.
- Wash and tear the lettuce into small pieces.
- Finely slice the Tempeh Rashers to your desired size.
- Toss all of the ingredients together, bar the lemon and balsamic glaze.
- Drizzle the lemon over the salad, then place it on top for decoration. Drizzle the balsamic glaze over the dish and serve.
