Tomato, Basil & Tempeh Spaghetti
This super simple and delicious basil and tomato spaghetti utilises our Mediterranean tempeh pieces to deliver extra protein and texture into a classic pasta dish.

- 1 Pack of Better Natures Mediterranean Pieces
- 200g Spaghetti
- 3-4 Garlic Cloves
- 50-60g Basil
- 1 can (400g) Finely Chopped Tinned tomatoes
- 2 Tbsp Extra Virgin Olive Oil
instructions
- Heat 1tbsp of Extra Virgin Olive Oil in a medium sized saucepan over a low heat. Add the 3-4 garlic cloves and 15g basil.
- Once the oil becomes fragrant with the smell of garlic and basil. Add the finely chopped tinned tomatoes. Season with salt, pepper & sugar. Simmer the sauce on a medium low heat for 15-20 minutes.
- Once you can see the sauce is reduced by a 1/3. Fill a stockpot with water and bring to a rolling boil. Add salt and then add 200g spaghetti cooking according to the suggested timings on the packet.
- Add 2 tsp of olive oil to a sautée pan on a medium - high heat. Add the tempeh pieces and cook for 4 minutes until heated through.
- Remove the pasta from the stock pot reserving some pasta water for the sauce.
- Add the spaghetti to the sauce along with the tempeh pieces and mix. Add 1/4 cup of pasta water to the sauce along with 30g of basil.
- Remember to season to taste. Serve immediately
